Given below are two statements:

Statement I : Emulsions of oil in water are unstable and sometimes they separate into two layers on standing.

Statement II : For stabilisation of an emulsion, excess of electrolyte is added.

In the light of the above statements, choose the most appropriate answer from the options given below :

Oil and water are not soluble in each other. since oils are non-polar organic compounds and water is a polar compound. So, they will form hydrophobic type of colloid.

Hydrophobic collides are unstable and required some stabilisers like proteins, gums, natural and synthetic soaps, etc. Excess of electrolyte can not act as stabilisers.

So, statement 1 is true but statement 2 is false.
